Pair looks forward to new challenge

A NEW era will begin at the Ball and Chain Hotel Motel in Simpson from today.
Nick and Biddy Weel, who have owned the pub for the past three and a half years, have sold the business.
Chefs Sarah Cygonowski and Daniel Brick, who have managed the kitchen for the past year and a half, jumped at the chance to purchase the business.
The pair’s first day of trading as the new owners is today.
“We’re definitely looking forward to it,” Mr Brick said.
Ms Cygonowski said the pair had a long-term involvement with the industry.
“We’ve always been in the industry, but we’ve run other peoples businesses and never our own,” she said.
“We’re looking forward to the challenge.”
Mr Brick said they had enjoyed working in the area.
“We love the area, people have been very welcoming since we started,” he said.
“We love the relaxed attitude. We’ve brought what we’ve learned to Simpson."
“We’re trying to keep the menu to what people like and get creative with the specials.”
Mr and Mrs Weel said they had decided it was time to sell the business and focus more on their family.
He said they had made the decision to purchase the business when it looked like it would be closed permanently.
“We’re very fortunate that we have a lovely community we live in who have supported us over the years,” Mr Weel said.
“Right from day one, they (the community) were with us."
“It’s time, we’ve done what we wanted to do with the hotel. We’re looking forward to a little trip or two and spending time withthe family.”
The couple congratulated Mr Brick and Ms Cygonowski on taking over the business.
“We wish Daniel and Sarah all the best,”he said.
“Thank you to all of our staff that we’ve had over the years."
“We’ve got some of the best staff.”
Mr Brick said the couple were looking forward to the future and hope to continue on with the legacy Mr and Mrs Weel have left.
“They have done a really good job,” he said.
“It’s up and running really well.”
