Wine tasting room opens

TIMBOON’S reputation as a foodie destination continues to grow with a new wine tasting room opening.

Niki Nikolovski and Tim Byrne of Babche have dedicated the last four years to pioneering their own vineyard in Timboon, planting pinot noir, chardonnay and cab franc inland from the Great Ocean Road.

And now they have added a new chapter to the Babche story, opening a tasting room near their vineyard in Timboon.

“A space to host old and new friends has been on our mind, and for the last while we’ve been working to make this a reality,” Mr Byrne said.

“The cellar door is an intimate space with a north-facing deck to sit and soak some sunshine.

“Our wines will be pouring and served alongside quality produce from our region.”

Babche is the meeting of two minds with a shared dream of working the land responsibly – and organically - to grow grapes and make wine representative of its location and variety.

These values are at the fore at their Tasting Room, according to Ms Nikolovski.

“Our plan was to open a relaxed and friendly rural wine place,” she said.

“The menu is simple – plates of local produce, showcasing the Great Ocean Road hinterland.

“Think single-origin cheeses from Schulz Organic Dairy and Apostles Whey, dry aged salumi from Crackling Smallgoods, fresh seasonal veggies grown organic by Eck Cottage Farm and Volcano Produce, ferments by Pickle Project and daily baked bread by Hila Perry from Schulz Café.”

Babche Tasting Room has capacity on the outdoor deck for eight guests and indoors for up to 12 guests, seated at the large timber table.

Babche Tasting Room is located at 3/9 Main Street, Timboon and is open between 12noon and 5pm Monday to Friday.
